First, let me tell you I have been eyeing recipes for pork carnitas for quite some time. The problem is every recipe calls for beer. Do not get me wrong, beer can be GREAT… but I am sure you have noticed by now we are trying to eat clean and healthy here. 🙂
With that being said, I went out on a whim and simplified this recipe quite a bit.
And the result is nothing short of AMAZING
So if you are looking for a simple, easy, and HEALTHY recipe for Pork Carnitas – look no further
Crockpot Healthy Pork Carnitas
Ingredients
- 2 lbs. pork roast
- 1 Jalapeno, whole
- 1/2 Red onion, minced
- 2-3 Garlic cloves, minced
- 1/4 C. Fresh cilantro, chopped
- 1 tsp. Cumin
- 1 tsp. Chili Powder
- 1/2 C. Water
- S&P to taste
Directions
- Throw it all in the crock pot, leave the pepper whole
- Cook on low 6-8 hours
- Shred and let cook another 30 mins at least
Top with whatever your heart desires!
Mine was topped with: Avocado, black beans, lettuce, and cilantro lime rice on a whole grain tortilla
Again, another family fave at my house. I was tempted to post a pic of my daughter shoveling it in her face, but then decided no one wants to see that. 🙂
